If I decide not to pay for a month, because im getting bored or I have too much to do in that month, will my character be deleted and what about my structures such as harversters, is there anyway to prepare them for a long break like that.

I think if you deed everything you should be fine. And I think it was said they wont start deleting unused chars unless the server was getting full.
