I guess your talking about shooters mainly?
That is a point of most single player games. You go from point A to point B. Progessing through the game's storyline, conquering the world, collecting all the pokemon, sooner or later you'll hit a brick wall. The trick is allowing players to have plenty of ways come to that wall, but in the end there will be a limit on how much they will be able to play and find something intersting after each gameplay.
Mulitplayer is a lot different. Because there are other players to interact with, your gameplay experiance will almost never be the same no matter how long you play.
I've always believed that consule systems had more attractive single player games compaired to the PC's mulitplayer games. Why I try to balance between the two. But that isn't to say that the PC hasn't had some great single player game nor that it won't in the future.
AI is a big issue these day. People want good stories and the "feeling" that they are taking part in those stories, and not just running around in a large sandbox full of stupid AI bots. Now days (or soon) you should be seeing NPCs taking cover behind objects, using tactics, working in groups, fighting in formations, calling for back up but not to many games right now have those on top of a great story.
There are some games coming out that SHOULD have some good AI/story like HL2 or Republic Commando (hope it will heh). I think AI has come leaps and bounds over the years, and don't think it will be to long before we see some really engaging stuff.
