Below are a few of the addons I regularly use along with links to their most recent version. Feel free to add your own in additional posts but please check to ensure you're not creating a duplicate entry and use the format shown below.

AddOn (red, size 18 font)
Function (blue, size 9 font)
Link (bold)

**EDIT** Please PM the post author if any links they've provided are broken or out of date.

Atlas
Provides a somewhat detailed map of instances. It helps in navigating instances but has no ability to illustrate three dimensions and therefore some maps may be confusing.
http://www.curse-gaming.com/mod.php?addid=539

Auctioneer
Scans AH to collect current pricing information on items and commodities. Also provides what profession uses each resource.
http://auctioneeraddon.com/dl/AuctioneerComplete/

BeneCast
This mod allows the user to automatically/easily case beneficial spells on themselves and others in their party. Highly reccomended by Gudsvenn so it likely also contributes to a good beer buzz.
http://ui.worldofwar.net/ui.php?id=2375

ChatAlias
Provides a bunch of predefined aliases for use in chat as well as macros, including those initiated by other mods!
http://www.curse-gaming.com/en/wow/addons-340-1-chatalias.html

CritLine
This addon saves your highest damage output and gives you a message if you break your records.
http://www.curse-gaming.com/en/wow/addons-1374-1-critline.html

CTRaidAssist
This mod was vital before WoW 1.9 and some will say it still is. Among many other things, it will group classes or groups in a raid and allow the user to better watch the MT. For now, I'm dropping this mod but thought I'd include it here.
http://www.ctmod.net/raidassist.ct

DamageMeters
Tracks damage and healing done by your character as well as other party members. This information may be sent to a /say, /party or other channel.
http://www.curse-gaming.com/en/wow/addons-791-1-damagemeters.html

Decursive
A negative buff cleaner that is fall-off-a-griffon simple. Even a dwarf can use it! It automatically configures itself to intelligently make use of pally, mage, priest, druid and shaman cleansing spells.
http://www.curse-gaming.com/en/wow/addons-643-1-decursive.html

FlexBar
Highly flexible and powerful UI manager. Supports button swapping, resizing, grouping, hiding, dimming and much more. Requires some work to set up but well worth it.
http://flexdev.mmorpgaming.com/

Gatherer
Handy little mod that keeps track of locations you collected resources (herbs, ore, etc) or opened chests. These sites are displayed as dots on your mini-map.
http://www.curse-gaming.com/mod.php?addid=44

Guild Event Manager (GEM)
Supports scheduling group- or guild-wide events and allows users to signup for these events. Class and level limits may be entered when a new event is added. **RECOMMENDED FOR ALL AVIANS ON DALARAN. SEE CONFIGURATION INSTRUCTIONS IN THE MOTD.**
http://christophe.calmejane.free.fr/wow/gem/

Group Calendar
Allows guilds or groups of friends to share an in-game event calendar. Configuration directions pending our evaluation of this mod.
http://www.curse-gaming.com/en/wow/addons-2718-1-groupcalendar.html

QuickLoot
If you're grinding away, save time by looting faster!
http://www.curse-gaming.com/en/wow/addons-132-1-telos-quickloot.html

Scrolling Combat Text
This is one of my favorite addons. When you character takes damage, is healed or experiences some kind of state change (stealth, aura change, stance change, shapeshift, poisoned, regeneration to name a few), that effect floats up and away from your character much like damage does above your enemies. Very simple but very helpful and I highly recommend it.
http://www.wowinterface.com/downloads/fileinfo.php?s=96fe1568ecea7b6ee0d048b2e6eb30c5&id=3965

SmackTalk
A fun mod that makes your character spew pre-configured phrases when you make a critical hit.
http://www.curse-gaming.com/mod.php?addid=981

SpeakEasy
No more boring speech macros! This one is kinda a combination of SmackTalk and the Bliz macro tool.
http://www.curse-gaming.com/en/wow/addons-666-1-speakeasy.html

TitanBar
This framework provides a lot of information in a relatively small amount of space. Information such as current coordinates (R-click to add them to a message), time to level, number of bag slots left, performance (FPS, latency) and many others may be configured for display.
http://ui.worldofwar.net/ui.php?id=1442

TitanRest+
A panel for Titan that gives you info about rest XP on all of your characters, including those on other servers. I haven't used this one yet but wanted to add it while I was thinking of it (and the servers were down).
http://curse-gaming.com/en/wow/addons-3201-1-titan-restplus.html

WhisperCast
Become a buffbot and enjoy fame and fortune! This mod allows you to queue up supported buffs for party/raid mates at their request via /w.
http://www.curse-gaming.com/en/wow/addons-463-1-whispercast.html

An add on that I use and really like is call eCastingBar. It allows you to move your casting bar wherever you like.

I'm sure there are others that have been listed here but I like this because it's so simple and easy.

Here's the link:

QuickMount

Just started using this and it is great. This allows me to swap 5 items every time I mount/dismount. Great for adding the Carrot and boots with spurs.

To anyone who might be using SmackTalk v0.51: You may have noticed that since Patch 1.10 it fires an error on logging in with a character, to the effect of "RegisterSave is reserved for Blizzard" or whatnot.

The fix is pretty simple. Open <WoW Folder>\Interface\AddOns\SmackTalk\SmackTalk.lua and find the line with the string "RegisterSave" in it. Just prepend the line with a double-dash (--), effectively commenting it out. Save the file. (It's plain text, so any editor, i.e. Notepad, will do.)

Next, Open <WoW Folder>\Interface\AddOns\SmackTalk\SmackTalk.toc (again with a text editor) and add the line:

## SavedVariables: Smack

It can go directly under the other lines starting with the double-pound (##).

Finally, if you feel like customizing your smack talking, the phrases can be changed by text editing the SmackList.lue file.

Find the section that starts with the following:

plyrname="DEFAULT"
STlist[plyrname]={}

And change the phrases between the double-quotes.
e.g.

STlist[plyrname][1]="Silly default phrase!"

...to...

STlist[plyrname][1]="Look, just hand over your trinkets and all is forgiven!"

Thanks for the fix! A few of us have built huge SmackList files and getting it fully working again will be excellent!

Sure thing. If you use Firefox and open the links in new tabs, you can update all of your mods in less than 10 minutes. :)

btw, i have recently started to use bouvi{s addons, and it actually has helped me keep my screen clean, since it uses tabs to display the spells, blessings auras, etc. and has a nice ui background and textures, you can find the class-speccific mods on www.bouvi.com, let me know what do you think

Good question - they're new to me. What do each of them do? Do you have experience with either/both of them?

well i use panza and i have had great luck with it. buffs all calsses with a push of one button. auto rezzes bodies. you can change what buffs go to what class. heals the person at the most threat or lowest life. you can adjust thresholds of all of these. i highly reccomend it. auto cures as well. with all of this it automatically creats macros for you to use as well. its great as well because it will free up your tool bars. if you have any questions on panza let me know
