The problem with Prot is that it doesn't really have a lot of talents to increase DPS.

Bad PvP talents:
-Anticipation: 10 def doesn't really have effect in PvP
-Toughness: 10% more armor won't help against spellcasters
-Defiance: purely for PvE only, because threat doesn't exist in PvP
-Imp Sunder Armor: you'll rarely use this ability in PvP

Good PvP talents:
-Iron Will: resist charms and stuns is good against rogues and warlocks
-Concussion Blow: another way to interrupt spellcasters
-1H spec: 10% increase is always good

But spending those points in Prot, you have to forgo talents in other trees. Here are some really good ones.

Arms:
-Deflection: additional 5% chance to completely avoid melee damage
-Tactical Mastery: allows you to retain rage while switching stances. You'll need it for PvP
-Imp Overpower: The rogue-killer, since rogues dodge so much.
-The Impale line is good since it increases your crit bonus.
-Sweeping Strike: hit two targets at the same time, kill more!
-Weapon specs make you more deadly. (Axe = +5% crit, Mace=5% stun chance, sword = 6% chance to swing twice)
-Mortal Strike: very hard hitting, and decreases healing by 50% on the target, pretty much the best PvP skill in the game -- or at least one of the best.

Fury:
-Enrage: get revenge on the person that just critted you.
-Flurry: makes your DPS go through the roof.
-Imp Intercept: helps a lot against casters.
-Death Wish: this one is situational, but when you use it you'll get a very big increase in DPS.
-Imp Berserker Rage: need to catch up to someone but have no rage, and you're in combat? Then switch to Berserker stance --> Berserker Rage --> Intercept.
-Blood Thirst: the damage is mediocre unless you have very good gears, but the healing bonus is nice.

Every talent put into Prot will lower your damage output (except 1H spec, but that's too deep in the tree). For PvP, Arms with MS (31/20/0) spec is good because it allows you to get huge burst damage when you get within melee range. And in PvP fights, a lot of times it's hard to stay in range of your opponent.

Fury requires you to stay in range of your opponent for longer periods of time to get all the damage out, but is still very viable in PvP IMO.

Here are some sample builds. I've tried the first two, but never Prot for PvP.

Example Specs:

Classic MS build:
http://www.worldofwarcraft.com/info/cla ... 0000000000
This is the tried and true MS build for PvP.

Fury PvP build:
http://www.worldofwarcraft.com/info/cla ... 0000000000
The impale line is to increase burst damage.

Prot PvP build:
http://www.worldofwarcraft.com/info/cla ... 3020001251
This won't do as much damage, as you will be running around with a shield. But this has better survivability, and the ability to annoy casters. It's also better to protect party members, with the stuns and silence.
